From Cartmel to Hong Kong: Our Academy’s Annual Overseas Experience

Each year, our Academy by Simon Rogan apprentices complete their course with an overseas trip to one of our international restaurants. It's a chance to explore new kitchens, cultures, and cuisines in the final chapter of their apprenticeship. It’s both a celebration and a continuation of their learning - a moment to reflect on how far they’ve come, and what’s next.

For all who complete the programme, it’s a well-earned reward for their dedication, curiosity, and hard work.

This year’s journey to Hong Kong was one to remember. We're grateful to Rosewood Hong Kong and the International Culinary Institute for their support and for making it so special.

Programme Details & How to Apply

Throughout this tailored programme, students will spend four days a week working across Simon Rogan’s Lake District kitchens - gaining first-hand experience of our farm-to-fork philosophy and the creativity that drives each of our restaurants. There’s also the opportunity to spend time with the team at Our Farm, learning how ingredients are grown, sourced, and prepared with purpose.

The fifth day of each week is dedicated to studies at Kendal College, where apprentices develop the foundational skills needed for a long and rewarding career in hospitality, working towards a Level 2 City & Guilds qualification.
