Adjacent to L’Enclume, Aulis Cartmel provides a ‘behind the scenes’ dining experience at Simon's three Michelin-starred restaurant. Limited to only six guests for lunch or dinner, guests can enjoy L’Enclume dishes whilst learning about our chef’s creative processes and how we work with ingredients from Our Farm.

For an exclusive event or celebration, Aulis Cartmel can be privately hired for up to six guests.

Exclusive Hire

By day, Aulis also functions as a hi-tech space and experimental hub at L'Enclume. As our development kitchen in The Lakes, it is used by our chefs as a place to create dishes and explore new cooking techniques. Every dish on the menu begins life at Our Farm, where we learn from our head grower what is at its peak. To complement the produce from the farm, we use ingredients foraged and gathered from the wilds of The Lakes or from a handful of our fantastic local suppliers. Those ingredients are then discussed with the senior team and developed into fully-formed dishes, which eventually make their way onto the menu at L'Enclume.

Aulis Cartmel is open for lunch and dinner from Wednesday to Saturday and for dinner only on Tuesdays.
